A few years ago, one of my best friends died in a helicopter crash in Iraq. He had actually gotten out of the Army at one point in his career, then chose to go back and fly some more. A year or two after he went back, he was involved in a mid-air collision that took his life. His widow is a good friend and still lives nearby. Every year, she has a small get-together for family and friends in her husband's honor. Her husband's brother-in-law used to make the barbecue for the group but hasn't been able to make it the last 2-3 years, so I volunteered. The group usually includes his mom, sister and her husband (who did the BBQ), wife and their kids many of whom are now grown (and one is in the Army), myself and many others with whom he used to fly. I attended his funeral at the military ceremony with hundreds of family and friends. The Patriot Guard was there too.

Your family and friends will honor you sacrifice today, friend. We will enjoy barbecue like you used to make for everyone, even while we were in Korea. Those that drink will all have a shot and toast you.

One year when we were in South Korea, he got permission to buy and build a brick smoker - a real one with an offset fire box. And SOMEHOW, he managed to find some real beef briskets. He sat up all night manning the smoker (and drinking) to make barbecue for everyone. That was my first exposure to real (Texas) barbecue.

The smoker was made entirely out of masonry bricks and mortar. It was a CRAPload of work.

Grandfather built something similar in Indiana. My guess would be about 3' x 6' in size. Outer layer was masonry brick. Inner layer was what he called "Fire Brick" but which I'd call "Refractory" if it were an industrial kiln. On top was a "hood" that he'd welded together and would accommodate 2 or 3 "rotisserie" baskets with electric motors. Fuel was whatever was chopped on the property, mostly hardwoods (Oaks, Elms. whatever).

Specialty was Chicken rather than Brisket. If y'all have ever had the chicken at a Boston Market or Pollo Loco or wherever, it's not even a lame imitation of what my grandfather could do.

The sauce? That he kept squirting on to the chicken throughout? My mom swears that it was "nothing special - vinegar + ketchup". I am not persuaded; It HAD to be something more complex than that.
